    Why I Love This Recipe

    This recipe is a staple in my home! It’s tasty, nutritious, and doesn’t involve any vegetable cutting. Even if my toddlers are running around, I can easily have it prepped in under 20 minutes. It creates a great base that you can always add onto if you want additional flavors or veggies. I usually enjoy it with a chunky slice of bread or add some shredded cheddar cheese. It’s also really tasty topped with avocado.

     

    Why This Recipe is Great for a Runner Mom

    This soup is hydrating and a great source of fiber, carbs, and protein. It’s a tasty way to help your body recover after a workout, especially on a cold day. However, be cautious eating this before a long or hard run. In general, fiber has so many amazing benefits. But for some people, fiber causes tummy troubles if consumed before a long or tough workout. 

    White Chicken Chili Recipe

    Ingredients

    • 1.5 – 2 lbs chicken breast
    • 2-16 oz jars of salsa verde
    • 2-15 oz cans of cannellini beans, drained and rinsed
    • 2-15 oz cans of pinto beans, drained and rinsed
    • 32 oz of chicken broth

    Equipment

    You will need a slow cooker for this recipe. I use the “slow cook” feature on a Ninja Foodi.

    Directions

    Place the chicken breast at the bottom of the slow cooker. Pour the jars of salsa verde over the chicken. After draining and rinsing the beans, add the beans to the slow cooker. Finally, add the chicken broth and stir everything. Cook in the slow cooker in high for 4 hours. After it’s finished, remove the chicken breasts and shred them and add them back to the soup. Now, it’s ready to serve!
